Recipe of the Week: Daddy’s Breakfast Biscuits


jamesandthecoffeepotAlmost 83-year-old James Holland, an alumni of East Texas Baptist College,  recently began cooking at home with his wife, Gerry.

His most recent kitchen creation are ‘Breakfast Biscuits’

Turn oven on to 400 degrees.

2 cups of plain flour, 1/2 cup of sugar, 1/2 cup of powdered milk, 1/2 cup of raw oatmeal and mix these dry ingredients in a large bowl.

Add and stir in the following, mixing well: 1 tsp vanilla flavoring, 1/2 cup  raisins, 1/2 cup water. 1 tbsp. creamy peanut butter, 1/2 cup vegetable oil.

Roll out to 3/8 inch on a floured surface. Cut-out biscuits with cutter (or a small juice glass).

Bake about 20 minutes. Turn over at 6-10 minutes. Check for doneness at eight minutes. (Should be browned, but not burned.)
